Delight in these tender muffins with a cinnamon swirl and crunchy streusel topping, perfect for breakfast or a snack.
Ingredients

1/2cupall-purpose flour
1/2cupold-fashioned oats
1/2cuppacked dark brown sugar
3/4tspkosher salt
5tbspsalted butter, cubed and at room temperature
1/4cuppacked dark brown sugar
2tbspsalted butter, melted and slightly cooled
1tbspall-purpose flour
1tspground cinnamon
Muffin Batter
2cupall-purpose flour
2tspbaking powder
1/4tspbaking soda
1/2tspground cinnamon
1/2tspkosher salt
1cupsour cream, at room temperature
1sticksalted butter, melted and slightly cooled
1/2cupgranulated sugar
2largeeggs, at room temperature
1/2tspvanilla extract
Glaze
1cuppowdered sugar
1 to 2tbspmilk(adjust for consistency)
Instructions
Preheat oven to 375˚F. Line a muffin pan with liners. Make streusel: mix flour, oats, brown sugar, salt, and cut in butter until crumbly.
Prepare cinnamon swirl: whisk brown sugar, melted butter, flour, and cinnamon. Set aside.
Mix dry ingredients for muffins. In another bowl, whisk wet ingredients. Combine gently until just mixed. Fill muffin cups halfway, add cinnamon swirl, top with remaining batter, and sprinkle streusel.
Bake 30-32 minutes until golden. Cool 10 minutes in pan, then transfer to rack to cool completely.
Whisk powdered sugar and 1 tbsp milk for glaze. Add more milk if needed. Drizzle over cooled muffins and let set for 10 minutes.
